Brush the chops with oil, season, then cook on a griddle or in a frying pan using the following timings:

Lamb chops: Oil and season. Heat an oven proof frying pan to a high heat. Sear the fat for a minute then sear 2 minutes each side. Transfer to the oven for 6 minutes. Rest for 3-5 minutes.
