puttanesca sauce
enough for two or three
2 tbsps of olive oil
½ onion, finely chopped
1 garlic clove, crushed
2 anchovies, rinsed and chopped
½ a dried chilli, chopped
1 x 400g tin of tomatoes
1 dsp capers, rinsed
10 black olives, stoned and halved
a knob of butter
Fry the onion in the oil until beginning to soften. Add the garlic, anchovies, and chilli. Stir. Add the tomatoes and simmer for 15 minutes. Add the capers, olives and butter. Check for seasoning - it shouldn't need any.
