roast topside/silverside/brisket of beef
_
Topside will probably set you back about £9 per kg, silverside and brisket about £7 (although brisket is more suited to a pot roast/slow braise).
For the following oven temperatures, you can estimate that the roast will take 20 minutes plus 15-20 minutes per 450g. However, ovens vary, so to get the roast just right, it's best if you use a meat thermometer. Insert it right into the middle of the joint. 60C for medium rare, 70C for medium .
For a 1kg rolled topside/silverside or brisket:
Heat the oven to 200C/180C fan. Season the joint and brown it in a large frying pan over a high heat for a few minutes. Transfer to a roasting tray and place in the oven. After 10 minutes, reduce the heat to 180C/160C fan. Roast for another 40 minutes or so. Remove from the oven and rest for 15 minutes or longer. That should get you a medium rare roast.
There'll be leftovers, but who wouldn't want them?
