stuffed baby peppers
serves two
4 baby peppers
1 large potato, cooked, mashed with a little butter
1 small egg, beaten
60g provolone or gruyère
2 tbsps parmesan
1 tbsp chopped chives
salt + pepper
olive oil for drizzling
Mix the mash, egg, cheese and chives together and season. Cut the tops of the peppers, remove pith and seeds with a teaspoon, and carefully trim the bottoms so the peppers will stand up. Stuff with the mixture, pack into an oven dish and drizzle with olive oil. Bake for 30 minutes at 200C/180C fan.
