cod + white bean stew

Or any firm white non-oily fish.

serves two
400g-500g cod, cut into chunks
1 tbsp olive oil
1 onion, finely sliced
1 garlic clove, crushed
1 red pepper, cut into thin strips
3 rashers streaky bacon, chopped
1 tsp paprika
60ml white wine
2 ripe tomatoes, skinned, de-seeded and chopped
300ml chicken stock
200g cooked white beans
1 tbsp finely chopped parsley
½ lemon, for squeezing
salt + black pepper

Heat the oil in a pan and fry the bacon until coloured. Remove with a slotted spoon. Add the onion, garlic and red pepper and fry until softened. Increase the heat, stir in the paprika and add the wine, scraping the bottom of the pan with a wooden spoon as it sizzles and evaporates. Return the bacon to the pan along with the tomatoes, stock, beans. Season with salt and black pepper. Simmer for 15 minutes. Nestle the fish chunks into the stew, along with some chopped parsley, and simmer for a few minutes until the fish is cooked through. Check for seasoning and squeeze in a little lemon juice.
