the skint rarebit
To make a true rarebit, I'd have to buy a bottle of ale or stout and end up throwing the rest away. Which I won't countenance. It also adds a few quid to what should be a cheap, impulsively made dish. So I use milk. This makes more than one greedy person can manage, but it doesn't seem worth making less. Refrigerate/freeze the rest for later use.
15g butter
1 dsp flour
225g strong cheddar cheese
2 tsps worcestershire sauce (or, better yet henderson's relish, if you can find it)
1 tsp english mustard powder
a few drops of tabasco
3 tbsps milk
black pepper
toasted white bread
In a non-stick pan, make a roux with the flour and butter. Add the cheese and stir until melted. Add the rest of the ingredients, stirring all the while. Pour over toasted bread and grill until bubbling and golden.
