black pudding + bacon with apple mash
serves two
1 large potato, in chunks
2 slices of butter
1 tbsp of milk
1 bramley apple, peeled, cored and chopped
1 tsp of caster sugar
6 rashers of streaky bacon
about 200g of black pudding, sliced into rounds
salt + black pepper
Boil the potatoes in salted water until soft. Drain, return to the pan and mash with a slice of butter and the milk. Season.
In a separate pan, cook the apple chunks with the sugar and remaining butter over a low heat until they've disintegrated. Mix into the potato mash.
Fry the black pudding until caramelised and grill the bacon until crisp. Serve on top of the mash.
