bolognese sauce
serves three
2 tbsps olive oil
500g minced beef (or a pork/beef mixture)
1 medium carrot, finely chopped
1 medium onion, finely chopped
½ celery stick, finely chopped
sprigs of rosemary and sage leaves, tied together
1 whole garlic clove
325ml red wine
a squeeze of tomato purée
1 x 400g tin of tomatoes, drained (juice reserved)
250ml water
salt + black pepper
Heat the oil in a frying pan to fairly high. Season the mince and add a third to the pan, stirring until browned (If you add all of the mince at once it will tend to stew). Remove to a bowl with a slotted spoon and repeat with another third, then another. Reduce the heat and fry the vegetables, herbs and garlic gently in the oil until softened. Transfer the mince and vegetables to a deep-sided pan. Add the wine and let it bubble away to almost nothing. Stir in the tomato purée and add the tomatoes and water. Bring to a gentle simmer, cover with a lid and cook for about 1½ hours, checking frequently. If it's drying out too much, add some of the tomato juice that you've reserved.
