caesar salad

Note: this contains raw egg.

serves one
1 egg yolk
1 small garlic clove, peeled and crushed
1 tbsp lemon juice
2 tsp Henderson's or Worcestershire sauce
2 anchovy fillets, chopped
3 tbsp olive oil
black pepper
2 thick slices of white bread, crusts removed, cubed 

olive oil
1 mini cos lettuce, torn into pieces
25g parmesan cheese, either in thin slivers (using a vegetable peeler)
or grated

Blitz the first six ingredients together and season with pepper. Toss the cubes of bread in a little oil and bake in an oven at 200c/180c fan for about 5 minutes until golden. Toss the lettuce with the dressing and place in bowls. Scatter over the croutons and parmesan. Toss well and serve.
