frying method for chops

Brush the chops with oil, season, then cook on a griddle or in a frying pan using the following timings:
Pork chops: Sear the fat for a minute then sear 5 minutes each side. ; check no blood or pink.
Lamb chops:  Sear the fat for a minute then sear 3-4 minutes each side. 

oven method for chops

Set the your oven to its highest setting.
Pork chops:  Oil and season. Heat an oven proof frying pan to a high heat. Sear the fat for a minute then sear 2 minutes each side. Transfer to the oven for 12 minutes. Rest for 3-5 minutes. 
Lamb chops:  Oil and season. Heat an oven proof frying pan to a high heat. Sear the fat for a minute then sear 2 minutes each side. Transfer to the oven for 6 minutes. Rest for 3-5 minutes.
