corned beef hash + poached eggs

One of the few meals I have tomato ketchup with.

serves two
a splash of groundnut oil
1 small onion, chopped
275g of cooked potatoes, in small chunks
200g corned beef, in small chunks
2 tbsp worcestershire sauce
1 rounded tsp of dijon mustard
salt + black pepper
2 poached eggs

Heat the oil in a frying pan. Fry the onion until soft, then throw in the potatoes. Fry until starting to crisp and brown. Mix the corned beef, worcestershire sauce and mustard together and add to the pan. Stir until the mixture is as crispy and browned as you like it. Season. Serve with an egg on top.
