courgette salad

serves two
2 courgettes, topped and tailed, cut lengthways into thin slices
salt + black pepper
olive oil
½-1 red chilli, de-seeded and finely chopped (or dried chilli flakes)
small handful pine nuts, toasted
1 tbsp chopped parsley
½ garlic clove, crushed
olive oil
lemon juice
parmesan

Season and oil the courgette slices and griddle on a high heat until nicely charred. Mix in a bowl with the chilli, pine nuts, parsley and garlic. Serve with oil and lemon juice drizzled over and scattered with parmesan shavings.
