crushed potatoes

The great thing about these is that you actually want lumps. Just crush your cooked potatoes in the pan with the back of a fork and add butter to taste (how much probably depending on the fattiness of the dish it is to accompany). Season well;  if I'm having this with a piece of fish, I'll sometimes stir in some chopped watercress.
