fresh tomato sauce

enough for four
750g of ripe plum tomatoes, skinned and chopped
3 tbsps of olive oil
2 garlic cloves, peeled and thinly sliced
salt + black pepper
a handful of basil leaves, torn

In a large pan mix the tomatoes and oil. Scatter the garlic on top and bring to a simmer over a low heat, stirring occasionally. After about 15-20 minutes, season to taste and stir in the torn basil.
