meatballs
serves two
300g minced beef
3 tbsps of fresh breadcrumbs
1 garlic clove, finely chopped
2 tbsp finely grated parmesan
1 tbsp chopped parsley
1 egg, lightly beaten
plain flour
1 tbsp olive oil
1 small onion, finely chopped
1 garlic clove, finely chopped
a pinch of chilli flakes
1 x 400g tin tomatoes
salt + black pepper
Put the first six ingredients in a bowl. Season and mix well. Form into small balls and roll in the flour. Heat the olive oil in a frying pan and brown the meatballs in several batches. Remove with a slotted spoon. Add the onion, garlic and chilli to the pan and fry until softened. Now add the tomatoes, some seasoning, and simmer gently for five minutes. Put the meatballs back in the pan, cover and simmer for 20 minutes or so, turning the meatballs now and again. Check for seasoning.
