pan con tomate

This is all about the quality of the tomato, of course.

serves one
1 slice of sourdough bread, toasted on a griddle
1 clove of garlic, halved
1 really ripe and juicy tomato, halved
olive oil
sea salt

Rub the garlic all over one side of the toast. Then rub with the tomato, squeezing to release the pulp. Douse with more olive oil than you think healthy, and sprinkle with sea salt. Bliss.
