pollock with a lentil stew

serves two
2 x pollock fillets
a splash of olive oil
a small knob of butter
lentil stew
flat-leaf parsley, chopped

Heat a frying pan and season the pollock. Add a splash of oil and the butter and sauté the fish for about 3 minutes, flipping once.  Baste. Place in the oven at 220C/200C fan for about 8 minutes. Ladle the stew into deep dinner plates, place the fish fillets on top and sprinkle with parsley.
