prosciutto + egg salad
Based on a recipe I copied down from some book or magazine long forgotten. So apologies to the originator of the idea for the cumin dressing for the non-acknowledgement.
serves two
6 slices of prosciutto, in strips
2 hard-boiled eggs, chopped
4 spring onions, finely sliced
10 black olives, stoned
leaves from 1 heart of romaine lettuce, torn
black pepper
dressing:
100g really ripe tomatoes, skinned and de-seeded
½ garlic clove, crushed
½ tsp paprika
a good pinch of ground cumin
a good pinch of salt
30ml olive oil
30ml red wine vinegar
Blend the dressing ingredients in a small processor (or mash together in a mortar). Dress the leaves with some of the dressing and arrange on two plates. Scatter over the onion, eggs and olives. Lay the serrano strips on top. Grind some black pepper over and drizzle with the remaining dressing.
