roasted fish fillet with pancetta

serves one
1 x 225g fish fillet (gurnard, panga, sea bass, sea bream etc.)
chopped rosemary leaves
chopped lemon zest
black pepper
a slice or two of pancetta
a splash of olive oil

Season the fillet with some rosemary, zest and pepper then wrap in pancetta. Fry in the oil for a minute a side and then roast at 200C/180C fan for 10-15 minutes.
