roasted tomatoes

I'm not a great fan of sun-dried tomatoes, but these I love: halve your tomatoes and scoop out the seeds. Place in a roasting tray, drizzle with olive oil, season with salt and black pepper and sprinkle with thyme leaves and a little sugar. Roast at 140C/120C fan for around 2 hours.
