squid with avocado + tomato salsa

serves two
for the salsa:
1 ripe avocado, diced
12 cherry tomatoes, chopped
½ red onion, finely chopped
½ red chilli, finely chopped
lemon juice to taste
small handful of coriander leaves, roughly chopped

450g squid, prepared and cut into largish diamond shapes, plus tentacles
olive oil
lemon
some chopped red chilli
salt + black pepper

Mix the salsa ingredients together in a bowl, seasoning and using lemon juice to make it as tart as you like. Heat a griddle. Season and oil the squid and griddle for a minute or two each side. Serve with the salsa, a piece of lemon and the red chilli to sprinkle over.
