chicken with a chorizo + white bean stew

serves one
a portion of chorizo + bean stew
a breast of chicken 
olive oil
lemon juice

salt + pepper
balsamic vinegar (optional)
chopped parsley

Heat a griddle until it's fairly hot. Whisk together a little oil and lemon juice and brush onto the chicken. Season. Put skin side down on the griddle and leave for about 5 minutes. Flip and leave until cooked through.  If you have any, a drizzle of balsamic would be just the ticket at this stage. The chicken should be golden on both sides and criss-crossed with markings from the grill pan. Spoon the stew into a deep dinner plate, scatter over some chopped parsley and place the chicken breast on top.
