chorizo, roasted pepper + rocket sandwich

Popularised, if not invented, by Brindisa at Borough Market. Theirs uses piquillo peppers, of course.

serves one
1-2 chorizo sausages, split lengthways
a roasted red pepper, cut into strips

a small handful of rocket
a smear of mayonnaise (optional)
black pepper
a ciabatta roll, split horizontally


Dry fry the chorizo slowly. Smear one slice of ciabatta with the mayonnaise (if using). Place the chorizo on top, followed by the pepper strips and rocket. Season with pepper. Dab the other slice of the bread roll in the chorizo oil before placing on top of the filling.
