sardines + roast tomatoes on toast

2-3 sardines (however many you think will fit on a slice of your bread)
2 tbsps of roasted tomatoes or roasted tinned tomatoes
1 half of a garlic clove
½ lemon
olive oil
salt + pepper
a thick slice of white sourdough bread
Ask your fishmonger to remove the heads from the fish, butterfly them and remove the bones (this is dead easy to do at home: cut them open along the belly from the head end to the tail and open out, flesh-side down. Press down along the body with the heel of your hand, then turn the fish over, grab hold of the backbone at one end and pull away. Remove any remaining bones with tweezers). Re-form them. Brush with oil and season the sardines and either griddle or grill. Either way, it'll take about 4-6 minutes. At the same time, toast your bread. Rub with the garlic and smear on the tomatoes. Top with the sardines, squeeze some lemon juice over and drizzle with olive oil.
