mushrooms with thyme
serves two
olive oil
a couple of handfuls of mushrooms, chopped
1 garlic clove, crushed
a good pinch of thyme leaves
a splash of white wine
salt + black pepper
Fry the mushrooms over a fairly high heat in the oil for a minute or two. Add the garlic and thyme and stir for a minute. Add a splash of wine and let it bubble away to nothing. Season. You are after golden brown mushrooms, slightly sticky.
